Frozen Frosty Strawberry Squares

Preheat Oven To 350°F

I found this recipe in the handmade recipe book that my grandmother and aunt’s made me for my wedding shower. The book is full of pictures of each person and photos of me when I was little. Each person also added their favorite recipes to the book. There are photos of me in the kitchen baking cookies with my grandma. I have such fond memories of those days and I still love getting to hang out with her in the kitchen!

This strawberry squares are so good and easy to make. With fresh strawberries and a few other ingredients you can make these for any occasion.

  • 2 cups sliced fresh strawberries
  • 2 TBL lemon juice
  • 2 egg whites
  • 1 cup sugar
  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/2 cup chopped nuts
  • 1/2 cup melted butter
  • 1 cup heaving whipping cream


Blend the flour, brown sugar, chopped nuts and butter together. Spread evenly into a shallow baking pan. Bake this at 350 degrees for 20 minutes or until golden brown.

In a large electric mixing bowl add the egg whites and sugar. Beat this until frothy. Then add the strawberries and lemon juice. Beat this on high until mixture holds with a stiff peak.

Whip the 1 cup of heaving whipping cream. Then you will fold the two mixtures together and pour over the prepared crust. Next put this in the freezer and freeze completely. You can also top with more whipped cream or make extra crust to sprinkle on the top before freezing.

Once frozen, cut into squares and enjoy!
